"Classic" is kinda broad... I wouldn't mind having anything from a confederate hellcat to a vincent black shadow (to impress hipster girls into h.s. thompson) to any "classic" mv agusta or ducati.
Oh wait I have a definitive answer... a triumph trident. I wasn't into "old" bikes at all until I met the weirdest guy I've ever met who rode around on one of those like a maniac.

Bit disturbed that nobody has posted any of these... I almost bought a RG500 as my first "real" big bike. No shit. I passed on it because the frame looked like it was welded on and the whole bike looked a bit shoddy. But it was up for sale at $4500 and I wanted one bad.
Lanc where did you find that? My former MX racing teammate Rich Pollock builds those in North County San Diego. He did the Triumph that was at the Cycle World shows a few years back. When I retire someday I am getting one of those. He builds some really awesome stuff. FWIW, he puts 750 kits in most of them.

Wow, some great choices here. I probably don't have the technical (or riding) skill to get much out of the purpose-built race bikes that have been suggested. But hey, if we are in dream-land, I could have a crew to help! I had the opportunity to purchase a "classic" that was languishing in the showroom as more of a "traffic generator" in the day. I bought it and am still hanging on to it. That said, I'd still like an RC-30. And all the other stuff on this thread... Except maybe the Goldwing cafe racer... Sounds Dangerous!
