I love ‘em, mostly because they make my heaters purple. But they’re kinda plain. I usually just boil ‘em, and make a simple roux. Whadya got???
Why a roux? My latest fave is peeled and disced pretty large, then wrapped in a foil pouch with some onion, olive oil, herbage (thyme usually), salt and pepper. Did some chopped dates in it once and that was really good. Also have dressed it with some vinegar and that was good too. The purple poo does rock
Bake. Concentrates the flavor. Drizzle with small amount of real balsamico. Yes it's dear, but a little goes a long way.
I’m doing prime rib and was gonna use the drippings to tie it in with the beets, and was thinking some rosemary added in. I like your idea. And I do have some foil... Also tossed down a purple Powerade earlier. Tomorrow’s gonna be AWESOME.
