Why the griddle over the grill? Why the change from stainless to cast iron - heat retention? I recently pulled out my gas grill from storage and need to start using it soon. Any tips/knowledge appreciated.
yes, the cast iron griddle retains heat better and spreads it evenly. the stainless griddle is ok, but once the patty is pressed, the flame needs to be turned up, just to be reduced and after flipping the same again, all while having local heat zones and being elevated from the burners. that cast iron griddle was $9 at walmart. works great.
Weber had direct fit cast iron griddles. Love mine for veggies, filets, and of course good ole burgers. I make my sliders in the shape of a golf ball, then press them on the hot griddle.

Breakfast burger - your choice of cheese, bacon, egg over easy or sunny, fresh slice of tomato, avocado. Optional chipotle mayo, grilled onions, or grilled mushrooms. This is the way.
I remember going to "Mr 15" outside Harrisburg back around 1960. Just like the sign said...15 cent hamburgers. They were pretty good too, though I probably would eat anything that had ketchup on it back then.....
