Modern motorcycles are like refrigerators. You just buy the one with the characteristics that you need and never give a thought to how it all works. I'm not saying that's a bad thing, but the industry repercussions were inevitable. Meanwhile, I'll be building ancient bikes from grubby old parts because I enjoy the process.
I feel like older bikes kind of have a bigger sense of "involvement" associated with them. Another reason I don't want to buy anything newer bc I don't want to have to deal with electronic issues with EFI. Kind of a "semi-lost art" in tuning carbs and that's something I want to learn in the future.
What issues? I have two bikes in the garage. Both have been sitting with treated fuel for a while. The FI bike fires right up. The carb bike barely started and currently runs on 3 cylinders...
Various marque specialists can provide carburetors, assuming that you don't need a new Jikov for a Jawa 90. I can easily get carburetors for my old Italian bikes.
