Which one? You can't make non-alcoholic beer directly. You make beer, then remove the alcohol. There are chemical and physical processes to do this, and one works better than the other, relative to residual fusel alcohols (aka higher-alcohols like amy alcohol, even at quite low ppm's). Fusels are notorious for headaches (in some people -- especially cantankerous ones).
