When completely drained about how much coolant will an SV require? I filled it and ran it for a while but it seemed to take only about 1/2 gallon of water.
Once you have it full, let it sit for a bit with the cap off. Did you completly drain the system, or just the radiator?
Even completey drained I don't think it'll take much more than a 1/2 gallon. Gary is right - if you have completely drained it you'll want to top it off after running it for a minute or two. That will get the air pockets out so you can fill it proper. You mentioned running it so I assume you already did that.
Ok since the coolant amount is minimal, anyone know of a fairly easy bolt on larger radiator for an 01 SV?
You don't need one. Even in a 6 hour endurance race in 106° heat an SS-prepped bike will run at the normal (85°C) temp. (And yes, that's the voice of experience. The riders didn't fare nearly as well as the bike.) Until you're getting over 90hp the SV has zero cooling issues.

We heard ya the first time Rich !! I agree, my SV has not had any cooling issues with the standard radiator. Genie Happy!!
What about false neutral issues? I've got an 05SV and made it through VIR and a few track days without a problem. Then suddenly during a track day this past Sunday it happened to me three times. Always down shifting, and no not into first I think from 6-5 and somewere around third.
