Mike Copoulos is the man you are seeking. He's very close to you and had a proven track record building SV motors.
But...carburetors. Cop ain't keen on carbs (at least that's what he says). TWF2 is your man, but out west.
If you can’t find anyone locally, buy everything you need to refresh the top end and do it yourself. It’s not rocket surgery. Tune the carbs yourself also. Plenty of how to’s out there.
Have a reputable shop (any of the suggested guys) do a leak down test. The Leak down will show if it is acceptable condition. If it is OK, ride it. Track seat time will drop lap times faster than a new motor.
