Lets hear some Chili recipes....I have just started into the Chili making world so I will start with my half assed recipe. Ground Beef Beef stock - enough to just cover up the meat in the pot. Celery Green peppers Garlic - Undisclosed amount Chili Powder - undisclosed amount ( i really dont know how much I put in) cayenne pepper black pepper season salt roasted red chilis 1-2 jalapenos - seeded (i dont like super spicy) Diced tomatoes red kidney beans and I am sure I am forgetting something....
My wife has one that she makes. Joe Morris would like it as it doesn't have any meats in it. Basically, all the normal stuff that is in a traditional chili. I myself like both, but she is not a beef eater so sometimes she will make both depending on if I want a bowl with beef or not.:up:
A buddy of mine made some beer chili onetime with Guinness in it for a Super Bowl party.......mmmmmmmmmmmmmmmmmmmm. I need to find that recipe too!

this is a very simple base chili that you can add your own likings. it has a very sweet initial taste but has a subtle kick in the end 1qt tomatoe juice 1 cup catsup big can of chili beans 1lb maple turkey bacon 1lb of lean hamburger 1 jalepeno 2-4 tbs brown sugar chili powder to taste 1 yellow onion put juice, catsup, brown sugar, and chili beans in pot and begin to heat cut up into squares and fry bacon in a pan after fried put the bacon into the pot and carmelize yellow onion that has been chopped in what is left from the bacon...put into pot cut jalepeno in half and scoop out seeds, mince and put into pot if you want to put any other veggies into the pot now's a good time to do it, I like carrots and celery, some good tomatoes if you have them brown hamburger put in pot let simmer for at least an hour (longer the better) chili powder/season to taste
You guys got the wrong color & meat going on. Give me some good chili verde any day. :up: # 1 1/2 pounds pork boneless and diced to cubes # 2 cups chicken broth # 1 cup green chile sauce # 2 cups tomatillos, husks removed and coarsely chopped # 2 roasted green chiles, seeded and diced (Anaheim or Poblano work well) # 4 cloves of garlic, peeled and diced # 1 medium onion, peeled and diced # 1/4 teaspoon black pepper # 1/2 teaspoon salt Diclaimer: Not being at home I just found this recipe after a quick google search so I can't vouch for how good it is. It does, however, seem pretty similar to one that I have used before because of the fresh tomatillos.
Saute jalapeno's and a habenero sliced along the length in a tsp of real butter, a splash of soy, a splash of vinegar, and a dash of honey. Set aside. I use a tomato paste and tomato juice for my stock base. I add 1/2 sweet vidalia, and 1/2 yellow onion (ringed- so I can remove them). Add peppers from above and reduce by 1/3. Then I add, red kidneys, pinto's, black beans, and cover. I season to taste with chili powder, cumin, and black pepper, and add a tsp of cane sugar (sugar in the raw). While that cooks, I fry a can of sweet corn until the sugar carmelizes, and the kernal breaks open. Set aside. I like my chili with crawfish, but you can substitute salad shrimp. (I actually use both. Sautee your skrimps fast and hot with crushed garlic and scallions cut very thin. Boil your crawfish normally. Add your skrimps and corn and give them 10 mins or so. Cover the pot with a layer of crawfish and give her a few. Serve chili on a bed of cornbread, with a pile of crawfish on the side.
I use the Carroll Shelby stuff a lot if I'm just making chili. Usually if I have time I grill the meat and the peppers(red and green bell) then chop them up in the pot. I use the diced stewed tomatoes... Delmonte garlic and herb ones. For beans I get the Chili beans. Either Bush's or I think the others are Delmonte. I have a book that is nothing but chili recipes. Some wild stuff in there.
Yeah yeah. You all drive like crazy MF'ers in GA and FL....just went down to FL for a vacation with the wife, and got road rage about every 5 minutes...
not much but being a native of gods country means he understands that chili is chili and beans are beans and never the two shall meet. i am stunned that his tree hugging butt eats dead animals though.
