It's the bomb! My wife is Mexican and we have it pretty regularly. Some will confuse it with Barbacoa which according to my wife is just the cheek. I have both fairly regularly and they are excellent when done correctly.
Around my place growing up it was considered a delicately. When we did a slaughter my dad would immediately toss the tongue in a bucket of brine along with local herb.. it the end of the day he would hang it in the smokehouse and slow cook it. The next night he would slice it thin enough to see light through and then invite the neighbors who would bring the rye bread, beer, bourbon and lies. Great memories. BTW, can be a little tough unless sliced very thin. Taste wise, very similar to a good roast. A little pickled horseradish sets it off.
Haven't had it since my grandma made it 2+ years ago. No idea how it was prepared, other than boiled and ground, eaten on crackers like you would liverwurst.
Agree here but more like braised brisket as it’s not cured. It’s my go-to for comparing taco trucks that cater to local Latinos. Very very beefy flavor.
Every year we have a cow butchered and I keep the tongue and heart. I prepare the tongue in a pressure cooker with Mexican herbs and seasonings. I eat it on tortillas with fresh cilantro, sliced onions, sliced avocado and lime. I'm the only one that eats it in my house and I'm okay with that that! I have not found a way to prepare heart that I like. I usually end up giving it to the dog. Also this Blackman ain't eating no chittlins! My mom used to make that sh*! When I was a kid. She finally talked me in trying it and I damn near puked! I haven't tried them since, eff that....
