What is the current easiest sportbike that you can street and maybe race if wanted? Meaning light taping and or removal// easy belly pan installation without changing out bodywork?
Not sure installing a belly pan to work with OEM street plastics would work without some cutting involved. Street fighter-styled bikes run custom belly pans (but they don't have fairings anyway). Race the street bike if you desire but just commit to the fact that it could be totaled and there's still the race prep and other mods you'll find wanting.
I'm wagering a guess that everyone's comments, so far, might seem flippant to the OP because -- *yawn* -- the question is a situation many others have been there, done that with already. Yet, the question still gets asked. For track days, your bike is fine with minimal prep that doesn't cost much at all. Racing is different altogether. Invest in a cheaply-priced, track-prepped bike. You'll be glad you did.

A naked bike is going to be your best bet for keeping the bodywork - a KTM 690 or Husky 701 is probably closest to what you'd be looking for. @grady anderson races (or raced) one.
I may be moving to a condo with no garage space. I'm in South Florida and it seems like one of our local track will be closing so I don't know how often I'll be riding and I don't want to give up motorcycling. I was thinking I can get something that I can have as street and insure it and not worry about it so much. Thank you for taking the time to research my background.
Buy race bike with title slap lights on ride street (if you still feel like it after racing, which is highly unlikely)
Own 2 bikes. Rent a ground floor apartment with the race bike stored in the living room. This is the way.
