You can, but you have to leave it in neutral when you park it and set the brake. I also think you have to bypass the clutch/starter interlock. Most shops probably won’t do it.
Back in the day we had a sensor that we attached to the stick shift itself and it could tell when it was in N. Not sure about today’s cars, but even in my 98 truck if it’s in N I can start it without my foot on the clutch.
Former coworker of mine had remote start on his 5 speed. He left it in gear one time and had to buy a new garage door.
